Sift the flour, add the dry yeast and mix well.

Melt the margarine in the milk and leave to cool. The milk must be warm when we put it over the flour. Add eggs and vanilla sugar and mix with a whisk. We put this composition over the flour and we start to knead until the dough comes off the bowl. Leave to rise in a warm place for an hour.

When the dough has doubled in volume, divide it into 4 pieces. From 2 pieces I made donuts in the oven and from the other 2 pieces I made donuts fried in oil.

We spread a piece of coca with a fork and with a glass, given through the flour, we make the donuts. Put the chocolate in place, then put a simple donut on top and glue the edges well with a fork.

We put the donuts in a tray in which we put baking paper, let them rise for another 10 minutes, then we put them in the oven for 15 minutes on a moderate heat, until they brown. While they are hot, grease the donuts with honey. We continue until the dough is exhausted.

We repeat the operation with the donuts fried in oil. Heat the oil and put the donuts one by one, let them grow and turn golden on both sides. Sprinkle them with powdered sugar while they are hot.

I also made some simple donuts that I had requested. However, the donuts fried in oil came out much fluffier and better than those made in the oven.

A very simple donut recipe, which I filled one part chocolate and one part with jam. Of course they can be left simple, without filling.


  • 200 ml of milk
  • 2 eggs
  • 4 tablespoons sugar
  • 570-600 g flour
  • 25 g of yeast
  • a drop of vanilla essence
  • + chocolate, jam
  • powdered sugar

How to prepare donuts with chocolate and jam.

Heat the milk, put it in a bowl and dissolve the yeast in it. Add the sugar and the 2 eggs and mix well. Add flour and essence, if desired, and knead a soft but non-sticky dough.

Leave the dough covered with a kitchen towel to rise for 50-60 minutes.

Sprinkle the flour on the worktop and spread thin sheets. We put a teaspoon of finetti or jam from place to place. Cover with another spread sheet and cut with a glass so that the umbilicus remains in the middle of the donut.

250 gr milk powder
400 gr sugar (although, it seems a bit much)
100 ml water
80 gr butter
2 tablespoons cocoa

I halved the quantities and made two chocolates: one white and one dark (with cocoa).
1. I greased a cake form with butter and put thin cellophane foil in it, so that the chocolate comes off better after it cools down.

2. In a saucepan put: sugar, water, butter, cocoa. When everything becomes a curdled syrup, take it off the heat and put the powdered milk, stirring vigorously and pour quickly into the form (it hardens immediately!)

3. I made the second syrup, without cocoa, I added powdered milk and I put the composition over the first one, in shape.

4. I let it cool well, took it out of the pan and cut it into sticks.

My problems were:
- The second syrup, the one without cocoa, was not thick enough and this is how the white chocolate is softer.
- Powdered milk is actually. granulated. And there are still small balls. No matter how well you mix, you don't have time: it cools down immediately and doesn't pour into the pan afterwards.

But, all in all, it turned out very tasty. Next time I will color the chocolate with different colors, and in the black one I will put the small, small pieces of orange peel. Or different essences.

  • 3-4 tablespoons powdered sugar
  • 2 tablespoons vanilla pudding powder
  • Lemon juice (to taste)

Method of preparation:

In a bowl, mix the flour with the sugar, vanilla sugar and salt. Add the egg yolk and oil. Dissolve the yeast in 200 ml of warm milk and leave it aside for 10-15 minutes to rise.

After the yeast has risen, add it to the flour bowl. Gradually add the remaining milk. Knead a semi-soft, fine dough, which comes off easily from the edges of the bowl.

Shape the dough into a ball, cover it with a clean cloth and leave it in a warm place for about 35-40 minutes to rise.As the dough grows, prepare the cheese filling. Mix the cheese with powdered sugar, pudding powder and lemon juice.After the dough has risen enough and doubled in volume, we transfer it to the worktop sprinkled with flour. Necessary ingredients:

  • the orange-free vial,
  • a pinch of salt,
  • orange peel,
  • a small jar of jam or a small jar of chocolate cream for filling.

Method of preparation

The first time, we prepare mayonnaise using:

Mix the ingredients in a bowl and place near a heat source until it doubles in volume for about 30 minutes.

Separately mix eggs, add sugar, salt, vanilla essence, orange essence, and grated orange peel. In a deep bowl, sift the flour and when the yeast mayonnaise is ready, put it in the flour, then add it over the egg mixture. Mix all the ingredients well with a wooden spoon until well blended and gradually add a little warm milk.

Then, by hand, knead the dough until you get an elastic dough, and perfectly homogeneous without lumps. Cover the bowl with a kitchen towel and leave to rise for about an hour. After it has risen, cut the dough into 2 pieces, and spread it on the floured work surface, then spread it on a not too thick sheet. Using a round shape, cut out circles. On each circle is placed in the middle jam or chocolate cream according to everyone's preference.

If the jam is too soft, you can add a little ground walnut kernel to it, because the donut will remain uncooked in the middle. The donuts require a little attention and time in their classic version (but I promise I'll be back soon with a quick and just as delicious recipe for yogurt donuts). They are the ideal dessert on weekends, when you have more time. And a fluffy, well-powdered donut with sugar never hurts anyone. Mini-me (i.e. Ilinca) loves them, but, nah, sugar and baby in the same room means two tons of stringed toys plus sitting on my head (literally), so I only make them two or three times a year, even though I I think of making them more often and eating them secretly :).

Donuts are not a great philosophy, they just need time, as my grandmother, who made the best donuts in the world, taught me.

Put 2-3 tablespoons of flour in a deep bowl. Heat 250 ml of milk in a bowl, and when it boils, pour it over the flour and mix vigorously with a pinch of polenta. You will immediately get a fairly hard dough, which you let cool. When cold, add 2 eggs, 200 grams of sugar, 150 ml of lukewarm milk (in which you dissolved 25 grams of yeast), a pinch of salt, vanilla seeds, grated lemon or orange peel. Mix everything and you will get a thin dough, in which you will incorporate the flour, around 600-700 grams. Finally, you should have a relatively strong, elastic dough, which you leave to rise for about two hours, until it triples in volume.

Now is the time to roll up your sleeves, because the most interesting part is coming. Take about a third of the dough and knead it on a well-powdered top with flour until you form a ball out of it. Then spread the dough in a 1-inch-thick sheet and cut the donuts with a cup, a glass or various shapes if you have one. Let them rise on the counter for another 15 minutes, during which time heat the oil well in a large pot or pan (the oil must be plentiful for the donuts to float). You can also make them in the fryer, provided that the oil has not been used for anything else before.

Fry the donuts over medium heat until golden brown, remove them on a paper towel and roll them in powdered sugar while they are still hot. At the end, I put a homemade raspberry jam in a bag (then blended and passed through a sieve to get rid of the seeds) and I "injected" it in donuts. But if you don't have a pouch, you can cut the donuts in half and fill them with jam / jam / chocolate.

As I said, a donut now & ampthen didn't kill anyone and I really prefer to give my child such a sweet, which is anyway the premium version of those bought on the street corner or those made of frozen products.
