A French friend of mine gave me this recipe for shortcrust pastry and it works a treat every time. It makes one 25cm pastry base for a quiche or a fruit tart.

IngredientsMakes: 1 pastry case

  • 200g plain flour
  • 1/8 teaspoon salt (or a pinch)
  • 120g cold, unsalted butter, cubed
  • 6 tablespoons of iced water

MethodPrep:15min ›Cook:15min ›Extra time:45min chilling › Ready in:1hr15min

  1. In a food processor, mix together flour and salt. Add butter, and process until mixture resembles coarse breadcrumbs. Add water 1 tablespoon at a time. Pulse briefly until dough begins to clump together. Remove dough from processor onto a floured surface, and form into a ball. Allow dough to rest at room temperature for 30 to 45 minutes before rolling out.
  2. On a lightly floured surface, roll out dough to fit a 25cm pie dish. Arrange the pastry over the dish and crimp the edge. Prick the bottom of dough several times with a fork. Place in freezer for 15 to 20 minutes. Meanwhile, preheat oven to 220 degrees C.
  3. Fill the base with ceramic baking beans, or use pie weights. Bake in preheated oven for 15 minutes. Remove beans, and continue to bake another 5 minutes. If necessary, cover with tin foil to prevent it from browning too much.

This was delicious! The only thing I added was a little more salt. I used this crust for a spinach quiche, prebaking the crust for 12 minutes before adding the filling. This is a great crust recipe for non-dessert pies, because it's rich without being sweet.-17 Oct 2002

  • 8.82 oz (250 g) wheat flour
  • 4.41 oz (125 g) room temperature unsalted butter
  • 1 egg yolk
  • 0.18 oz (5 g) water
  • one pinch of salt
  • optional: 0.44 to 0.71 oz (12.5 to 20 g) sugar (exclusively for sweet pie)

Quantity of liquid will depend on the type of flour used. In that recipe, flour is white. If you use whole flour the you will probably need a little bit more liquid. Just try and adjust.

Variant (without egg):

  • 7.05 oz (200 g) wheat flour
  • 3.53 oz (100 g) room temperature unsalted butter
  • 2.12 oz (60 g) milk
  • one pinch of salt
  • optional: 0.71 oz (20 g) sugar (exclusively for sweet pie)

To give more taste or personnality to your pastry you can add a tea spoon of flavours of your choice to the flour: cocoa, cinnamon, vanilla, spices, herbs. You can also infuse tea or herbal tea into the water…


Helpful Tips to Make Perfect Shortcrust Pastry

  • Keep butter and water cold&mdashice cold: This is crucial: the butter and water you use should in this recipe should be very cold&mdashnot room temperature, not cold from the fridge, *ice cold*. Ice-cold butter better distributes into the flour, and ice-cold water allows the dough to come together without melting the butter, both of which are key to producing tender, flaky dough.
    • To make ice-cold water, simply pour a bit of water in a small bowl, then fill it with ice. The water will be cold enough to use a minute or two later.
    • To make ice-cold butter, cut it into cubes, spread the cubes over a small plate, then plate it in the freezer for 20 minutes.
    • Shortcut your way to shortcrust: Keep portions of pre-cubed butter stored in airtight containers in the freezer. Whenever I want to make a pie crust, no need to wait 20 minutes for the butter to cool&mdashI simply take out a container of frozen butter cubes and add it straight to the food processor. I prefer this to freezing shortcrust pastry because mixing a fresh batch of dough with frozen butter is much, much quicker than letting shortcrust pastry thaw to room temperature.
    • Be accurate: This shortcrust recipe works, but only if you&rsquore counting accurately. You&rsquore literally seconds away from under- or overmixing the dough, so make sure to concentrate. If needed, look at your watch or use the stopwatch function of your phone to time things accurately.

    She acquired her knowledge while living in Paris and studying at the Cordon Bleu de Paris

    Julia spent many years in Paris and discovered the French food, and while attending the Cordon Bleu, learned about French cuisine techniques.

    When she moved back to the United States, Julia Child published her book "Mastering the Art of French Cooking, Vol.1", a masterpiece that is still a best seller that you still can find nowadays in all bookstores in the states. What an impressive undertaking !

    I always make shortcrust pastry in the food processor, but if you don't have one you can use the rubbing in method.

    Start by cutting very cold butter and lard into small cubes and put in a large glass bowl with the salt and flour. Gently rub the butter with the flour with your finger tips until the mixture resembles fine breadcrumbs. If you prefer you can use a fork or a pastry cutter to get the same effect.

    If you have a food processor simply tip the ingredients into the bowl attach the lid and pulse the mixture three or four times until it gets to the breadcrumb stage. Next add two tablespoons of cold water and pulse twice.

    At this stage I check the dough with my fingers to see if it sticks together when pressed. You might need to add another tablespoon or more depending on the atmosphere and the dryness of the flour.

    Turn the processor on full and within a few seconds the mixture should come together into a ball.

    Form it into a flat round shape with floured hands.

    You can use a loose bottomed flan dish but I prefer to use a 22cm loose bottom cake tin. This gives a deeper quiche.

    Lightly flour the work surface and roll out into a circle to cover the bottom and sides of the tin. Trim the edges flush with top of the tin and fork the bottom of the pastry.

    Chill in the fridge for 30 minutes.
