Broccoli soup

I put broccoli seedlings in the garden. The rich caps we see at the supermarket didn't come out. I was a little disappointed by the small green inflorescences until I saw in an Italian culinary show that it is another kind of broccoli. I prepared tasty soups with these raw and full of vitamins inflorescences during the summer. It is so delicious that we can't wait to taste the soup. .

  • 50 ml olive oil
  • 2 tablespoons rice

  • 1 red pepper
  • lemon juice
  • salt
  • pepper

Preparation time: less than 30 minutes

RECIPE PREPARATION Broccoli Soup:


  1. Clean and wash the vegetables.

  2. Finely chop the onion.

  3. Cut the carrots and peppers into cubes.

  4. Cut the Kaizer into cubes.

  5. Lightly fry the kaizer in oil just enough to leave it to taste.

  6. Add the onion, carrot and pepper. Cook together until the onion becomes glassy.

I cook it more by ear (that is, I don't measure the ingredients and sometimes I vary the quantities) and I avoid cooking onions, that is, I throw the vegetables in the soup (chicken or even beef) in approximately equal pieces, and the moment they have softened enough I take the soup from the heat source and mix.

If you want to give an Italian touch to the soup (although I haven't seen many Italians crazy about broccoli soup) you can add a drop of good quality extra virgin olive oil and grate a little Parmesan cheese right on the plate.
Others (eg my husband) would prefer a piece of butter (not very healthy, but tasty) or sour cream.

generally when you boil broccoli you have to leave it to boil for only 5-8 minutes with a lid (you only put it when the water boils after 5 minutes you taste it and see if it is ok). then drain it and keep it that way until you serve it. sometimes you can immerse it in ice water to stop the boiling and keep the color, but if you serve it hot, it is not necessary. in this way the taste is not so intense. I don't like boiled broccoli either, it doesn't taste good. as well as cauliflower, if it's too boiled I don't like it anymore.
the soup is light, it does not have an intense broccoli taste and the parmesan peel is essential to soothe its taste. although, I have a friend who tried the recipe with smoked cheese and said it turned out super well.

I just finished cooking it and I couldn't believe how tasty it can be! Indeed, the parmesan peel makes the difference. I just had Parmesan cheese left, including the peel, from the 2 dishes I cooked, risotto with mushrooms, so it came to fruition.

Hi Ioana. I have a little question. Did you find broccolini at your market? It is a hybrid between normal broccoli and Chinese broccoli. I read that it has substances that cause cancer cells to "commit suicide" and that the risk of cancer decreases by 50%. How good it is to cook broccoli so as to keep as many of its nutritional properties as possible, but also to taste good. I've tried broccoli twice, hardly, but I've tried it and I'm ashamed to say I hate it. But I really can't stand it. I cooked it steamed with butter and cheese, I admit.
