Last week I saw on the facebook group a pie with courgette flowers prepared with a base of wholemeal beer batter without eggs and a filling of courgette flowers, mozzarella and anchovies. The recipe was proposed by Sonia Giacomelli, I had everything at home and I immediately set out to prepare it. In its simplicity, this pie turned out very good, and was much appreciated, especially by my father. How to make zucchini flower pie
Clean the courgette flowers by removing the central pistil, cut the mozzarella into cubes and the anchovy fillets in half.
Prepare the batter by mixing the flour with the beer, seed oil, salt and baking soda.
Pour the batter into a 22 cm non-stick pan.
Cover the batter with the zuicca flowers, anchovies and mozzarella. Drizzle with a drizzle of oil and bake.
Bake the pie in a preheated oven at 200 ° for 15 minutes.

ah how I love zucchini flowers! but do you know that I can't find them here? I searched everywhere, supermarkets, flea markets. I have to find a farmer somewhere or raise them myself. Maybe it's a project for next summer. These terrines are delicious, what a delicious recipe!

It's not good .. it's the end of the world! I always ate the flowers only with the batter, then I discovered the omelette and ok .. but this pie .. I had to redo it the next day because we had the desire left! Amazing.

Zucchini flower soup
Ingredients for 4/6 people:
200 gr. of courgette flowers
250 gr. of thalli and tender leaves of courgettes
350 gr. of tender zucchini
250 gr. of green beans or tender snow peas
200 gr. of potatoes
3 ripe San Marzano tomatoes
1 medium onion
1 stalk of white celery
50 gr. of basil
3 tablespoons of extra virgin olive oil
1 glass of water
Salt to taste.
Wash all the vegetables thoroughly. Chop the potatoes, courgettes, carrots, celery, onion and tomatoes. Break up the thalli, some basil and the leaves of the zucchini into not too small pieces. Tick the green beans and break them in half. Arrange everything in a tall soup pot, season with three tablespoons of oil, salt and a glass of water. Cook over low heat for about 30/40 minutes.
When serving the dish, hot or, if desired, even lukewarm, add the remaining basil.

This summer, given the abundance of courgette flowers, I invented an alternative way to cook them. The result was a success, so I decided to propose it to you, even if a little late, because in the meantime other recipes have taken over :).
Garlic, parsley, oregano, salt and black pepper
Peel the potatoes, wash them and cut them into thin slices, possibly with a mandolin.
Season with salt, oil and oregano.
Grater. together with caciocavallo and provolone.
Blend the homemade bread with garlic, parsley, parmesan and black pepper.
On parchment paper distribute a first layer of potatoes, then a second layer of flowers, sprinkle with caciocavallo and provolone, again a layer of potatoes and close with breadcrumbs.
Bake at 180 & # 176 for 40/45 min.

Shopping list for the zucchini pie in a jar
Wash and trim the courgettes and courgette flowers, removing the pistil if large. Slice the courgettes with the help of the mandolin. Chop the mozzarella and pat it with absorbent paper. Wash, bone and cut the anchovies into small pieces.
Brush the bottom of the 2 jars with a little oil and sprinkle the surface with a little breadcrumbs. At the end, let the closed jars rest for 20 minutes, during which time the cooking will be completed, the liquids will be absorbed and the vacuum will form.
Now the pie with courgette flowers and courgettes in a pot is ready. You can keep it for 15 days in the refrigerator, enjoy it warm by pulling the seal or unhook it, put it back in the microwave and heat it for a few minutes.

Finish with the courgette flowers left aside before and with the slices of provolone to create a layer. Fold the edges of your puff pastry, brush them with eggs and milk if you like, and put in a preheated oven at 180 ° C for about 20 minutes.
Once golden brown your savory pie with zucchini and courgette flowers will be ready to be baked and served to your guests after leaving it for about ten minutes to rest at room temperature.
Alternatively, you can prepare a quiche with asparagus or a quiche with eggplant, both very popular and easy to make preparations.
