Top: Whole eggs are mixed first, with a pinch of salt, until they reach volume. Then add the sugar, spoon by spoon, up to 15 tablespoons. After each tablespoon, mix very well. This part lasts 20-25 minutes. After the sugar has been incorporated, remove the mixer targets and with a spatula, from bottom to top, mix gently, while the flour is added. Add the orange peel.

In a tray lined with baking sheet, put the strawberries, over which add the dough and put in the oven for 25-30 minutes. The toothpick baking test is performed. Leave it in the oven for approx. 10 min, with the door ajar. Finally, turn the top over on a tray.

Strawberry jelly: the strawberries are passed with a blender. Over this composition, put water, sugar. Dissolve the starch in 2-3 tablespoons of water and place over the strawberries. The composition is put in a pan on the fire, for 15 minutes. When the composition is ready, let it cool.

Vanilla cream: in a saucepan, mix the yolks with the sugar and a pinch of salt very well. The starch dissolves in the milk, and the milk is added to the yolks. Homogenize and put on fire. Leave it to boil and at the end, add the butter and vanilla essence.

Chocolate icing: heat the whipped cream. Add the chocolate. Stir until the chocolate melts, without the cream boiling.

Assembly: over the already cooled top, put the strawberry jelly, over it put the vanilla cream and finally, the chocolate. It is decorated with sugar figurines.
