This delicious sandwich cooks up hot and toasty on the grill in no time.MORE+LESS-


red bell pepper, cut into 1-inch-wide strips


small summer squash, cut into 1/4-inch-thick strips lengthwise


slices whole grain bread


1/4-inch-thick slices fresh mozzarella cheese

    Preheat the grill or barbecue.

    Place the strips of red pepper and summer squash on the grill and cook for 2-3 minutes per side, until grill marks appear.

    Place four slices of whole grain bread on the grill on indirect heat. Top each with slices of red pepper and summer squash, and then a 1/2 cup of arugula. Place a slice of mozzarella cheese on top of each. Place the remaining four slices of bread on the grill as well.

    Cover and cook for 3-4 minutes. Close the sandwiches, press down and remove from the grill.

This grilled vegetable recipe is DELICIOUS and such a great way to enjoy the summer’s bounty. A few of my other favorite grilled veggie recipes are Grilled Portobello Mushroom Burgers, Honey Balsamic Grilled Chicken and Vegetables, and Grilled Rainbow Peppers with Cream Cheese.

How If you prefer to grill them indoors, you can also grill the vegetables on a grill pan, then preheat to oven to 350°F, make your vegetable stacks on a baking sheet and melt the cheese in the oven. The vegetables can also be grilled a day ahead and reheated in the oven as well.

Grilled vegetable mozzarella sandwich

The sandwich is stuffed with one’s choice of veggies and mozzarella cheese.It is nutritional filling and beautiful looking dish per cfect for a Sunday breakfast or brunch.

1.Lettuce(torn with hand )
4.Green bell peppers(sliced finely)
5.Red Black pepper(sliced finely)
6.Yellow bell pepper(sliced finely)
7.Cucumber (sliced)
8.Chilly flakes(1 tsp)
9.Black pepper(1 tbsp)
10.Lemon juice(1/4th cup) chilly(1 finely sliced)
12.Mozzarella (shredded 1 cup)
13.Sea salt (as per taste) sugar or honey (1 tsp)
14.Olive oil(2 tsp)
15.Chilly flakes(1 tbsp)
16.Brown bread (4) for 2 sandwiches

1.Marinate the veggies with salt and lemon juice,sugar,green chilies and black pepper.
2.arrange the vegetables slices on the brown bread and sprinkle black pepper.
3.Spread grated mozzarella and place another brown bread on top.
4.Drizzle olive oil.
5.Grill for 20 minutes

Extra Special (crunchy) Version

To make this sandwich even more spectacular, do the following. After assembling the sandwich DO NOT BUTTER THE BREAD, but dip the sandwich in beaten egg, first the bottom.

Next, dip the bottom in breadcrumbs, remove the top piece of bread and dip, upside down in the egg.

Remove the sandwich from the breadcrumbs, dip the eggy top in the breadcrumbs and place back on top of the sandwich. This is just easier than trying to flip the entire sandwich upside down.

Melt some butter in a non stick frying pan, when hot, add the sandwich. Cook until golden brown on both sides and serve hot. It’s deliciously crunchy!

Note: you can also add caramelized onions to either sandwich if you love them as much as I do!

Easy Chickpea Salad Sandwich

If you asked us for easy vegetarian sandwiches, we’d name this one first! Our chickpea salad sandwich is quickly becoming a fan favorite, and it works for both vegetarian and vegan diets. Essentially a vegetarian chicken salad sandwich using chickpeas, the chickpea salad features mashed chickpeas, celery, green onion, a little mayo, and a pop of lemon. We served this one up with hummus spread on both sides of the bread, and it added an extra dimension. It’s one of our top healthy sandwich ideas. (Vegan option)
