This is the first time I prepare cream soup. I ran away from it, because I've tasted different combinations before, but I didn't like them at all, I especially don't like their consistency. Now, being fasting, I had lentils, mine to make them a cream soup. I was a little skeptical at first, but I said come on, let's see. I made the soup, I made some croutons and when they started to taste, I saw that they like it, they immediately put a portion to eat. I was happy and I will definitely do it again.

  • 1 parsnip
  • 500 gr red lentils
  • 3-4 baked peppers
  • 1/2 cup homemade tomato juice
  • salt
  • pepper
  • 1 tablespoon Transylvanian vegetable mixture
  • paprika
  • dried basil
  • 3-4 tablespoons olive oil
  • croutons for serving

Preparation time: less than 60 minutes

RECIPE PREPARATION Lentil cream soup with baked peppers:

Finely chop the clean onion, the parsnip and the peeled carrot, cut them into cubes. In a saucepan put the chopped vegetables and 3 liters of water. Transfer the pan to the heat, simmer until the vegetables are penetrated. Wash the lentils in 2-3 waters. When the vegetables are cooked, add the lentils. Add the tomato juice, season with salt, pepper, paprika, dried basil and vegetable mixture. Stir occasionally and leave on the fire until the lentils are penetrated. When everything is cooked, set the pan aside, drain the liquid in a bowl (drain more, because, if needed, then add more). Take a vertical mixer and pass well. Kapia peppers, peel them, spine and seeds. If you have them in the freezer or in the jar, you can use them. Add the peppers over the lentils, but also the olive oil. Pass for the last time with the vertical mixer. Adjust the taste with salt, if necessary. Depending on the desired consistency, add more liquid or not. Cut into cubes 2-3 slices of bread, sprinkle with olive oil, a little salt and oregano. Put them in the hot oven, at 200 degrees, until lightly browned. Serve cream soup with croutons and a little olive oil. If you do not want to fast, you can serve it with a little sour cream. Good appetite!
